
Serves 4-5 people
Ingredients:
2 lbs of chicken, 2 cups of basmati rice, 1 medium sized yellow
onion, 1.5 tbsp of oil, 3/4 cup of tomato sauce, 1 tbsp of tomato
paste, 8 oz of Portuguese BBQ Marinade, a handful of cilantro
(optional)
Step 1 –Preparing Chicken
Skin and wash 2 lbs of chikcen.
Add 8 oz of Portuguese BBQ Marinade to chicken and mix well
and let stand for 20 minutes at room temp.
Step 2 –Preparing Rice
Wash 2 cups of Basmati rice.
Soak rice for 15 minutes.
Cook rice.
Step 3 –Preparing Base
In a pot add 1.5 tbsp of oil
Mince one medium sized yellow onion and add to the pot
Set pot to medium heat and cook onion until golden brown.
Step 4 -Add the following to the pot
3/4 cup of tomato sauce
1 tbsp of tomato paste
1/2 cup of water
(optional) a handful of finely chopped cilantro
Mix well
Step 5 -Adding Chicken
Add chicken to pot.
Let sauce and chicken simmer until cooked (roughly 15 mins).
Once chicken is cooked, place rice into a large mixing bowl.
Add sauce and chicken to large mixing bowl.
Mix gently but thoroughly.
Step 6– Final
Place mixed rice, sauce, and chicken into an oven safe dish with a cover.
Place dish in oven at 250° F for 10-15 minutes.
Take dish out of oven and let cool for 5 minutes.
